Crisp Pear Coleslaw with Tuna

A salad that marries crisp pear, carrots, red cabbage and red onion with tuna chunks and mint.

Ingredients

1/2 red cabbage, shredded
2 carrots, peeled and grated
1/2 red onion, finely sliced
2 pears, cored and finely sliced
1 handful fresh mint leaves, finely sliced
1 cup Eta Lite and Free Honey Mustard Dressing
juice of 1 lemon
180 g can Greenseas Tuna Chunks in Springwater
mint leaves for garnishing

Method

  • In a bowl toss together the red cabbage, carrots, red onion, pears and mint with ETA Honey Mustard Dressing and lemon juice.
  • Just before serving toss in Greenseas Tuna Chunks in Springwater and transfer to a serving bowl and garnish with the mint leaves.
  • Serve with a wholemeal roll.
