Saucy Beef Olives

The jury is still out on how beef olives got their name when there are no olives in sight. If you haven't tried them before or even if you have, give this variation a go. It has a fruity stuffing and saucy gravy, and can be cooked in the oven or in the crockpot for really tender beef.

Ingredients

1 1/2 cup dried stuffing mix
1/4 cup raisins or cranberries
6 beef schnitzels
2-3 tsp oil
1 onion, sliced
250 g mushrooms, sliced
1 Tbsp chopped fresh thyme or 1 tsp dried
550 g can Wattie's Just Add Hearty Savoury Mince Simmer Sauce

Method

1. Preheat oven to 180ºC.

2. Combine dried stuffing mix with raisins and 3/4 cup cold water, mix well and set aside.

3. Place beef schnitzels between sheets of plastic wrap and flatten with a rolling pin. Cut each schnitzel into 2 even sized pieces.

4. Divide stuffing into 12 equal amounts and place on beef slices, roll up and secure with a toothpick.

5. Heat the oil in a non-stick frying pan and quickly brown the beef olives, turning 2-3 times.

6. Arrange the onion, mushrooms and thyme in the base of a casserole, place beef olives on top.

7. Pour over Wattie’s Just Add Hearty Savoury Mince with 1 cup water.

8. Cover and cook in the oven for about 1 hour or until the beef is tender. Serve garnished with parsley and steamed green vegetables.

Tip!

Crockpot / Slow cooker instructions:

Prepare beef olives following steps 2-6 and place in the slow cooker with Wattie's Just Add Hearty Savoury Mince
(no water required). Cook on LOW for approx 8 hours (refer to your user manual).Garnish and serve as directed above.
