Beetroot and Feta Summer Salad

Easy, flavoursome and refreshing − just what you need in a salad.

  • 100 g snow peas or green beans, sliced
  • 410 g can Wattie's Beetroot Slices, drained
  • 300 g Craig's Chickpeas in Brine, drained and rinsed
  • 1 yellow capsicum, deseeded and cut into strips
  • 1/2 cup Eta Lite and Free Feta and Garlic Dressing
  • 50 g feta cheese, crumbled
  • 2 Tbsp pine nuts, toasted (optional)
Beetroot and Feta Summer Salad


1. Drop snow peas or beans into boiling water for 1 minute to quickly blanch. Drain and cool quickly in ice water.

2. Cut Wattie's Beetroot Slices in half and set aside. On a serving platter, layer the beetroot, chickpeas, capsicum and snow peas.

3. Drizzle with the Eta Lite & Free Feta & Garlic Dressing, and sprinkle over the feta and pine nuts if wished. Serve as a light meal or as a side salad.


Assemble the salad just before serving.
