Crunchy Slaw

Everyone loves a coleslaw, but this one has a few surprises, namelt nutty shelled edamame beans and a little ginger! Don’t forget to add the crispy noodles right before serving so they stay crispy.

Ingredients

  • 1/2 700g bag Wattie's frozen vegetables - High Fibre Mix
  • 4 cups finely shredded cabbage
  • 1 Tbsp minced ginger
  • 1/2 cup Eta Coleslaw Dressing
  • 140g pack crispy noodles
  • 2-3 Tbsp toasted sesame seeds

Method

1. Cook Wattie’s High Fibre Mix according to the instructions on the bag. Drain and set aside to cool.

2. In a bowl, toss together the cabbage, ginger and cooled vegetables. Just before serving, mix through Eta Coleslaw Dressing and lastly the crispy noodles and sesame seeds.

Tip:

To toast sesame seeds, spread over a tray under a preheated grill. Shake a few times to toast evenly, keeping a close watch as they burn quickly.
