Crisp Pear Coleslaw with Tuna

A salad that marries crisp pear, carrots, red cabbage and red onion with tuna chunks and mint.

Ingredients

  • 1/2 red cabbage, shredded
  • 2 carrots, peeled and grated
  • 1/2 red onion, finely sliced
  • 2 pears, cored and finely sliced
  • handful fresh mint leaves, finely sliced
  • 1 cup Eta Lite & Free Honey Mustard Dressing
  • juice of one lemon
  • 180g can Greenseas Tuna Chunks in Springwater
  • mint leaves for garnishing

Method

1. In a bowl toss together the red cabbage, carrots, red onion, pears and mint with Eta Honey Mustard Dressing and lemon juice.

2. Just before serving toss in Greenseas Tuna Chunks in Springwater and transfer to a serving bowl and garnish with the mint leaves.

Serve with a wholemeal roll.
